Hardwood Butcher Block with Woodcut Resin Inlay

Mango is one of my favorite woods for butcher block cutting boards. It has the perfect hardness with a janka rating of 1070 — slightly harder than walnut but much easier on knife edges than maple or acacia. Mango has a stunning and quite distinctive grain pattern with gray and yellow accents that fit perfectly with contemporary kitchen decor. I just love it.

Mango wood is ethically sourced and sustainable; it is a dual-purpose wood that is first used for food production (obviously) and then the trees are harvested for wood products so that the orchardscan be replanted for more food production.

This is a serious butcher block. It measures 17 3/4” x 13 1/2” × 1 1/4” and weighs a substantial 5 1/2 lbs. This makes it big enough for a brisket or turkey and heavy enough that it won’t slide around. The facing side has a perimeter groove for juicy meats or watery produce, while the back side is flush. I use the back side for cutting sourdough bread — with a very long and aggressive serrated knife.

I leave mine right on the countertop; it looks awesome.

The facing side of this butcher block features a deep engraved (3/16”) woodcut design that is filled with a durable semi-transparent smoky resin. I have been experimenting with this old woodcut art style and I absolutely love it! It goes so well with the pronounced wood grain and gives it a cool retro vibe. The tough resin won’t chip, flake, or fade, and there are absolutely no gaps.

Of course this butcher block is completely food safe. I make my own finish using mineral oil, beeswax, and carnauba wax for toughness. To maintain the finish apply mineral oil or butcher block conditioner every six months. Wash by hand.
