This butcher block is made of rubber wood, which is an excellent option for a cutting board. It has the a janka rating of 960 — identical to walnut and a good choice for protecting knife edges. Rubber wood is known for its light color (similar to maple), silky texture, and straight grain. It is a sustainable choice as it is harvested from rubber tree that have reached the end of their latex production cycle.

This is a serious butcher block measuring 17 3/4” x 13 1/2” × 1 1/4” and weighing a 5 1/2 lbs. This makes it big enough for a brisket or turkey. The facing side has a perimeter groove for juicy meats or watery produce, while the back side is flush. Use whichever side is right for your application.

I leave mine right on my countertop. It looks awesome.

The facing side of this butcher block features a deep engraved (3/16”) traditional Polynesian turtle design filled with a durable semi-transparent smoky resin. Even with its fine detail, the tough resin won’t chip, flake, or fade, and there are absolutely no gaps.

Each of these inlay butcher blocks takes over a week to make. I love the contrast of the resin on this light rubber wood.

Of course this butcher block is completely food safe. I make my own finish using mineral oil, beeswax, and carnauba wax for toughness. To maintain the finish apply mineral oil or butcher block conditioner every six months. Wash by hand.
